Spanish Goods
A Malagueña (“Maa-la-gen-ya”) is a woman from Malaga, the home town of my grandmother on my mother’s side.
This spicy sausage redolent of the hot south, is prepared with a mix of Spanish paprika, garlic, salt, black pepper and cayenne.
It is a product for those who want a bit more bite to their sausage. My grandmother Amalia used to put chilli in my mouth when I swore (I have a feeling it only made me swear more!) so this sausage is a homage to her.
Although it’s spicy, the meat is still the protagonist.
The heat creeps up slowly to fill the palate with the warmth and passion from southern Andalucia.
